Next Tuesday, February 14, is Valentine’s Day, and we can’t think of a better way to declare our love for seasonal products than with a new weekly menu. Because yes: we are in love with fruits and vegetables at their optimum date for consumption and with all the options they offer in the kitchen. If you also share this passion for them, read and make at home all the recipes that we propose on this occasion.
Monday February 13
FIRST: CARROT VICHYSSOISE
This carrot cream can have variations in the recipe: you can use broth or water, or add or not cream. What does not admit discussion is how delicious it is.
SECOND: CHICKEN IN PEPITORIA
This traditional recipe of Spanish cuisine, with centuries of history, consists of stewing poultry, rabbit or beef in a sauce made with its own juice, saffron, hard-boiled or raw egg yolk and ground almonds. Nothing else.
DESSERT: QUICK CHEESE
This is the version fast and furious to make cheese You only need to beat the eggs, milk, cheese, sugar and flour, and then put the dough in the oven for about 50 minutes.
Tuesday February 14
FIRST: GRILLED ENDIVES WITH QUINOA
The endives, which are in season, reduce their bitterness after going through the grill, and we take advantage of it to star in a sweet and citrus salad accompanied by quinoa.
SECOND: PASTA WITH CABBAGE
Good pasta dishes with few ingredients do not only come from Italy. This recipe, which is prepared in Poland, the Czech Republic or Hungary under different names, is a tasty example of this.
DESSERT: SEASONAL FRUIT: MANDARIN
Ok: the smell of tangerines is not easy to wash off your fingers, but it is a lesser evil compared to its juiciness.
Wednesday February 15
FIRST: ROASTED AND MARINATED BEET SALAD
A salad that can bring the most colorful winter root vegetable to your table, after passing through the oven and after frolicking in a cheerful marinade based on garlic, honey and balsamic vinegar.
SECOND: SAUTEED BROCCOLI AND TOFU WITH CHICKPEAS
You have to start seeing tofu for what it is: a sponge that absorbs flavor. So if it’s dull, maybe it’s your fault.
DESSERT: CARROT CAKE PANCAKES
Two American pastry classics united: these ‘pancakes’ copy the best of carrot cake, with its characteristic spice flavor and an addictive mascarpone cheese coating.
Thursday February 16
FIRST: CATALONIAN SPINACH
There are few vegetables that are easier to cook than spinach: just put them in a pan with a little oil and wait for them to cook. Your best friends? Fruits and nuts.
SECOND: COD TACOS WITH AVOCADO CREAM
This appetizer drinks from fish tacos that are made in coastal areas of Mexico such as the Gulf of California. It is usually battered and fried, although you can lighten it by sautéing the pieces of cod.
DESSERT: SEASONAL FRUIT: ORANGE
We are sorry to tell you that oranges do not cure colds, but they are still very tasty.
Friday February 17
FIRST: STEAMED MUSSELS WITH CHILI, LEMON AND GINGER
The humblest members of the bivalve family once again star in a simple yet exotic recipe. With only four ingredients and three rules to follow, success is assured.
SECOND: ROASTED LEEKS WITH SARDINES AND VINAIGRETTE
A first or starter that you can serve warm or cold and customize to your liking: this recipe offers many options.
DESSERT: FLAN CARAMEL
This dulce de leche flan will make your head explode. The secret to getting its texture is in the temperature, so pay attention. Let’s salivate!
Saturday February 18
MAIN DISH: ROASTED CAULIFLOWER WITH CREAM CHEESE AND MUSHROOMS
If it has never occurred to you to roast a whole cauliflower, here is your chance to try this vegetable cooked in all its splendor.
DESSERT: SEASONAL FRUIT: KIWI
Kiwi is in season and is one of the fruits with the highest concentration of vitamin C. Ideal for coping with the cold.
Sunday February 19
MAIN DISH: LAMB MEATBALL PITA
A different and tasty sandwich for informal meals and snacks. The power of the lamb combines perfectly with the tahini and lemon sauce, and the freshness is provided by the shoots and the aromatics.
DESSERT: ‘LEMON PIE
The buttery dough with a salty touch, the acid and tasty filling and the sweetness and texture of the meringue make this recipe a resounding success here.
the drink of the weekend
