Last week we put together ten very simple recipes to make returning to the rhythm of mere mortals more bearable (that is, going back to work and/or studying). Today the weekly menu returns in style, with ingredients from this spring season – artichokes, asparagus, peas, strawberries – mostly light and easy to prepare. Don't forget that you can always make variations on the dishes to adapt them to the ingredients you have available, the Food Police will not come for you.
Monday April 8
FIRST: HUMMUS WITH ROASTED CARROT AND PEPPER
A healthy, tasty and economical appetizer with the characteristic flavor of roasted carrot, which can also be used to brighten up morning toast or grilled vegetables.
SECOND: CHICKEN SALAD WITH RADISHES, BEANS AND LEMON VINAIGRETTE
This dish is a feast of flavors and colors that also offers a thousand versions: you can change the arugula base for another green leafy vegetable or use fresh radishes instead of pickles.

Tuesday April 9
FIRST: ENDIVES WITH BLUE CHEESE
We give the old endives to Roquefort a twist by removing the cream from the recipe and changing it for sweet wine. We also add a touch of orange to refresh and walnuts, which provide resistance to the bite.
SECOND: PASTA WITH GREEN ASPARAGUS
These rigatoni with asparagus are brilliantly supported with beaten egg, so that a fantastic silky texture is achieved for the sauce, while softening the acidity of the tomato.

FIRST: COLD AVOCADO SOUP
It is creamy, satisfying and easily combined with different ingredients as a toppingswhich makes it a good candidate to turn into a single dish.
SECOND: CHICKPEAS, PEAS, MINT AND EGG
A very quick recipe that unites two different legumes, perfectly complementary. A touch of fresh mint, some garlic, oil and mild vinegar and an egg as a culmination round out the proposal.
DESSERT: CINNAMON ROLLS
The dough for classic 'cinnamon rolls' is versatile. With it we can prepare other breakfasts or snacks with sweet and savory fillings: try it once and start thinking about your favorite combination.

This recipe could very well be called mild pickled anchovies, but I preferred not to get carried away by the Basque in me and call it anchovies.

Flan is a totally versatile dessert, in which we can replace milk with other ingredients such as yogurt. We accompany it with a couple of seasonal fruits: strawberries and raspberries.
