In this edition of France in Focus we explore traditional French cuisine. In the 19th century, restaurants called ‘bouillons’ emerged, at that time there were almost 250 in Paris. Despite the passage of time, these popular places are still booming, now not only in the capital, but also in other cities in the country. The success of these establishments consists in maintaining the same formula: French cuisine dishes at a good price, with a ‘belle époque’ decoration.
