A chef with 20 years of experience, Vladimir Maksimov, who three years ago became the chef of the most fashionable restaurant in Makhachkala, spoke about the restaurant habits of Dagestanis in an interview with Moslenta.
He noted that restaurant guests in Dagestan eat everything they ordered, which amazes the chef. He explained that it was different in the restaurants in Moscow, Sochi and St. Petersburg, where he worked.
“People here really enjoy their food and savor every bite,” the chef explained.
At the same time, according to Maksimov, there are many conservative and picky people in Makhachkala. Sometimes people who are accustomed to the kebab shop format come to restaurants and are extremely indignant that the establishment does not have the familiar “Caesar” and “Greek” salad. In addition, the establishment does not serve sliced vegetables, which the locals are accustomed to, which is also a frequent subject of disputes with visitors.
“Sometimes we get such strange reviews that it’s not clear whether to laugh or cry. For example: “The food was excellent, everything was very tasty! The drinks were great, the meat was excellent. But I’m giving you one star because when leaving the restaurant it seemed to me that the hostess rolled her eyes,” the chef shared, adding that this is exactly what and there is all of Dagestan.
