We are already in the month of July, therefore our weekly menu must have and has fresh, summery, refreshing, tasty recipes and seasonal products. Dishes such as cold cucumber, yogurt and mint soup or a caprese salad with figs, and desserts such as caramelized melon or sautéed peaches with mascarpone cream are good examples of this. You see that, when the heat tightens, the kitchen can be our oasis.

This typical Arab-Mediterranean appetizer improves its flavor when we prepare it directly on the flame, it has infinite applications and it is so good that you will adopt it as a fridge stock.

COLD CUCUMBER, YOGURT AND MINT SOUP
Cold cucumber and yogurt soup is a classic of summer food in the Middle East and Balkan countries. A dish of Jewish tradition, as is logical, it is taken in multiple versions: this one is half classic, half invented.

CANNED SPAGHETTI WITH COCKLES
A version with minimal effort of the “spaghetti alle vongole” that does not detract from the original at all if we use some worthy cockles. With its juice and a sautéed garlic we bind a tasty sauce.

SEASONAL FRUIT: MELON
The melon is your friend during the summer and it is supposed that, if it smells, it is heavy and the base gives a little when you squeeze it, it will be good. But it is not an exact science.

TOMATO AND PEACH GAZPACHO
Gazpacho is one of the most typical cold soups of summer. If we add a fruit from this season such as the peach, the result is more summery than a Nivea ball.

CRUNCHY BEANS WITH GREEN BEANS AND GARLIC
Combining legumes, as tasty as they are healthy and cheap, with vegetables is a guaranteed win. In today’s recipe we make the habonas beans in the oven and mix them with green beans.

CARAMELIZED MELON WITH MINT
We give a twist to one of the most refreshing fruits of summer. These sweet little balls are the perfect snack even for melonphobes.

CAPRESE SALAD WITH FIGS
We changed the tomato of the most popular salad in Italian gastronomy for a delicious seasonal fruit, and we added a citrus touch to the dressing that comes in handy.

MARMITAKO
We are in tuna season, and that in the Basque Country is celebrated in the best possible way: with a good marmitako.

SEASONAL FRUIT: PEACH
They are soft, tender, juicy and very aromatic when they are at their optimum point. If you get bored of eating them alone you can always click on the link and try one of the recipes.

MELON SALAD, BASMATI RICE AND CURRY
This recipe is very easy to make, it is delicious and a picnic solves the same thing as a lunch or dinner al fresco. Everything that can be asked of a summer dish, come on.

RAW KNIVES GRATIN WITH MAYONNAISE
Seafood au gratin with mayonnaise or hollandaise sauce is a real delight: the only trick to make them perfect and not dry out is to cook them very briefly before going through the oven or blowtorch.

CHOCOLATE MARQUISE (NO OVEN)
There are lustful, dirty desserts, porn and then there is the marquise. A wonderful semi-cold cake that can be accompanied with whatever you want.

CAPONATA LASAGNA
Caponata is one of the most versatile appetizers and starters in Italian cuisine, but in addition to a side dish, it can be the perfect filling for main dishes. Example: this tasty lasagna.

SEASONAL FRUIT: WATERMELON
It should have a yellowish stain where it has been in contact with the soil, and when you tap it with your fingers it should “feel hollow.”

PIQUILLOS STUFFED WITH CHICKEN AND RICE
If you are one of those who does not like piquillo peppers, you are in luck, because this recipe softens its flavor. If you like them, you’re going to enjoy them just the same, so good for everyone.

SAUTEED PEACHES WITH MASCARPONE CREAM
Summer and the stove don’t get along very well, but what little time you spend on them to sauté these spiced peaches will be well spent. We guarantee it.
