We never get tired of combining fruit with vegetables in salads like this one with melon and cherry tomatoes. If we also put a succulent cheese like burrata, and a bit of good ham, the result is to lick your fingers and cool down in equal parts. I have taken the idea of this recipe from the British supermarket Waitrosewhich treasures some wonderful recipes on its website, which many large national supermarkets could already learn (wink, wink, nudge, nudge).
Lately I appreciate in the British a mania for dressing absolutely everything with mint leaves, and I think that mint does not go with absolutely everything. Without going any further, this recipe calls for ham and, in my very humble opinion, ham and mint go hand in hand. In its place I have put a fresh oregano, although some basil leaves could also do the job (since fresh oregano is not the easiest herb to find).
Burrata is a very creamy fresh cow’s cheese which, as with almost any other cheese, is already found in a wide variety of qualities on our market. Try to find a burrata that is not cheap; As with Serrano ham, the price is usually a good indicator of its quality.

Ingredients
For 2 persons
- 300 g of skinless melon
- 200g cherry tomatoes
- 1 burrata
- 1 fresh or pickled chilli
- Serrano ham to taste
- A few drops of cider vinegar
- Virgin olive oil to taste
- Salt to taste
- fresh or dried oregano
Preparation

Cut slices of melon and remove the rind, until you have the indicated weight. To slice in dices.

Wash the tomatoes, pat dry and cut in half. Put in a salad bowl with the melon and add virgin olive oil to taste.

Remove the stalk and seeds from the chilli, and finely chop.

Add the chilli to the salad bowl along with the vinegar, a little more olive oil and the salt, and stir.

Place the burrata in the center of the salad and the Serrano ham around it. Sprinkle with oregano to taste and serve.
