Rodi Fernández, from La Taúlla, proposes a journey to the pleasure of good food with paprika as the common thread
One of the sauces at the Kursaal Palace was dyed red, this Wednesday, on the last day of San Sebastián Gastronomika. The ‘painter’ was Rodi Fernández, chef of the La Taúlla restaurant, located in Espinardo, an old paprika mill built in 1920. After its restoration and conversion into a restaurant, it kept its three floors, with a drying room on the top, where they dried the ñoras, a small room, the main room of the restaurant on the ground floor and, in the basement, a private room with a small paprika museum. “In Taúlla we want to preserve the air of those old mills, everything that is the structure and culture of paprika is preserved and we intend to transfer all those experiences and emotions to our kitchen,” explained Rodi Fernández.
And to show it by a mullet roe, previously painted with paprika, is covered with a bandage before being buried in salt. “In the end, the salt does not directly touch the roe and it acquires a buttery consistency.” Accompanied by a “unique in the world” bread, a ñora paprika bread, made by an artisan from Fuente Álamo. An extraordinary combination that the attendees could enjoy.
Fun cuisine, with peaks of flavour, “which in the end are what create small memories in the diner’s brain”, explained the chef. And as an example he presented a new snack: a spectacular appetizer mounted on a small hourglass consisting of a tuna ‘panigiri’, a fusion of Indian, Mexican, Japanese and Murcian cuisines. Bluefin tuna, citric guacamole, soy and orange points… “a whole journey through our taste buds”. To finish, a blue cheese cake from an artisanal cheese factory in Lorca: a cheese with high acidity that is corrected with chocolate and paprika; again the Murcian red gold as the driver of the entire presentation. Murcian red gold, symbol of an industry that had a great weight in the economy of the Region and that continues to be the flag of its gastronomy.
This closes the participation of 1.00 Sabores Región de Murcia in this year’s edition of San Sebastián Gastronomika. Dozens of professionals passed through its stand and up to 25 activities related to kitchens and the regional pantry have been held.
