Monday June 27
BEAN SALAD WITH APPLE MUSTARD AND MINT
Green beans can not only be eaten hot. In a salad and cooked to the point they give a crunchy and fresh touch to this recipe, which comes to the fore thanks to the homemade apple mustard dressing.
‘CORDON BLEU’
There are versions with chicken or pork, but the original recipe calls for beef, ham, cheese and a crispy batter. It also appeared in the tune of Elena Santonja’s program, to which we continue to pay tribute.
Tuesday June 28
COLD CUCUMBER AND AVOCADO SOUP
The heat is back and with it, the season of cold soups. This one, halfway between a green gazpacho and a vegetable cream, is made in five minutes and without any type of dairy.
PASTA WITH PRAWNS, DRIED TOMATOES AND LEMON
In this pasta dish we use the coral hidden in the head of the prawns to flavor an ‘aglio e olio’. A touch of lemon to refresh, some dried tomato and we have the meal ready.
SEASONAL FRUIT: WATERMELON
It should have a yellowish stain where it has been in contact with the soil, and when you tap it with your fingers it should “feel hollow.”

CRISPY BREADED ZUCCHINI
If you think courgettes are bland, you haven’t tried them dressed in a layer of non-greasy batter. In case you find flowers of this vegetable, we also teach you how to fill them.

CARROT VICHYS SOISE
A lighter and more refreshing version of the classic vichyssoise, ready to be included in the repertoire of cold soups ready to give their lives to save ours when the heat hits.
TUNA IN FRUIT PICKLED
We are in full tuna season, and we celebrate it with this fruit pickle. We cook the fish over a very low heat and without stirring it so that it does not break.
NO-BAKE CHEESE, STRAWBERRY AND BANANA CAKE
No-bake cakes are the dream of those who practice the two most forgivable capital peccadilloes: laziness and gluttony. You don’t have to kill yourself with them because they are done in two kicks, and at the same time they satisfy your lowest piggy and cowburresque instincts.

GOLDEN CHICKEN TACOS
If you have leftover roast chicken, suckling pig or baked lamb, you can use the leftovers to put them in a corn tortilla and make some browned tacos in the pan.

NOODLES WITH AUBERGINES AND GRATIN ‘ALL I OLI’
We cook a vegetarian cousin of the fideuà, without shellfish, fish or anything of the sort, but with some very sweet aubergines and an ‘all i oli’ of algae au gratin to get an extra gustirrinín.
ICE CREAM POWDER
A very popular dessert in the Canary Islands that combines biscuits, ice cream and the dry powdered meringue that gives it its name. You can buy it prepared at the supermarket, but the homemade version is much better.
