Not only Torrijas: three typical Holy Week desserts that you can make at home easily

Holy Week is one of the most anticipated festivities of the year, not only for all the traditions that accompany it, but also for the opportunity that it gives us to enjoy a delicious variety of typical desserts. Among them, Torrijas are undoubtedly the most popular, but there are many other sweets that are part of the gastronomic culture of this season. These desserts, full of history and taste, are perfect to prepare at home and share with family or friends.

The combination of fried, baked or cooked sweets, together with the spices and typical aromas of the season, makes each of these desserts special and unique. From the traditional fritters to the classic Easter, each region has its own recipes and customs.

While some of these recipes require some time and dedication, many of them can easily prepare at home, allowing all homes to enjoy the traditional flavors of Holy Week. In addition, these desserts have been adapted over time, retaining their roots, but with variations that fit today’s tastes.

Easter cute


Easter Mona is one of the most traditional desserts of Holy Week in Spain. Its origin dates back to medieval times, when the godparents gave this sweet to their godchildren as a symbol of the celebration of the resurrection of Christ. With the passage of the centuries, the Easter Mona has evolved, but always maintaining its essence as a sweet holiday that accompanies Easter celebrations.

The ingredients for about six people are: four eggs, 200 g of sugar, 200 g of flour, a yeast envelope (baking powder), 100 ml of soft or sunflower olive oil, the zest of a lemon, a pinch of salt, a beaten egg for brush and hard eggs to decorate.

For the preparation of the Easter Mona we will follow the following steps:

  • Prepare the mixture. Put the oven to preheat 180º and meanwhile, put the four eggs in a large bowl. Add the sugar and bote it all until you get a foamy mixture. Then add the oil and lemon zest and continue beating.
  • Add the other ingredients. Incorporate the flour next to the yeast and a pinch of salt and add the previous mixture. Remove everything very well until you get a homogeneous mixture.
  • Mold and bake the dough. Put the dough on a baking sheet and mold it until you get a round shape. Brush the surface with the beaten egg to give a beautiful golden color when baking and bake for about 30 minutes.
  • Let it cool and decorate it. Once we have the baked monkey, let it cool. When it is cold, decorate the surface with hard eggs or if you prefer, you can add icing sugar on top.

Wind fritters


Wind fritters are a very popular traditional sweet in Holy Week in Spain, especially in the Madrid region. They are light, spongy and have an airy texture, which gives them their name. In addition, they can be filled with cream or cream and sprinkle with icing sugar.

The ingredients of this recipe for four and six people are: 250 ml of water, 100 g of butter, a pinch of salt, 200 g of wheat flour, 4 eggs, frying oil and icing sugar to sprinkle.

For your preparation we will follow the following steps:

  • Prepare the dough. In a pot, heat the water, the butter and the pinch of salt over medium heat until the butter is completely melted. When it starts boiling, add the flour at once and remove quickly with a wooden spoon. Cook the dough over medium heat for a few minutes, until it takes off from the walls of the pot.
  • Add the eggs. Remove the pot from the heat and let the dough cool. Add the eggs one by one, beating them very well. The dough should be soft and sticky, with a light texture.
  • Fry the fritters. In a deep pan, heated plenty of oil at 180 ° C. With the help of two spoons or a pastry sleeve, forms small balls of dough and fry them in the hot oil. Do not put too many at the same time to prevent them from sticking to each other. Fry them for three or four minutes or until golden and crispy on the outside.
  • Drain and add the icing sugar. Once fried, remove the fritters from the oil and put them on absorbent paper to eliminate excess oil. While they are still hot, sprinkle with sugar and you will have them ready to serve.

Fried milk


Fritish milk is another traditional desserts in Spain. This delicious candy has a soft texture inside and a crispy layer on the outside. It is very easy to do at home, and with a few ingredients, you can enjoy this delicacy.

The ingredients for about four or six people are: a liter of milk, 150 g of sugar, a cinnamon branch, the skin of a lemon, 100 g of cornstarch, two eggs, frying oil, sugar and cinnamon powder. These are the steps to follow:

  • Prepare the milk mixture. In a large pot, heat the milk together with the cinnamon branch, the lemon skin and 100 g of sugar. Remove from time to time until the sugar dissolves and the milk is very hot without letting it boil.
  • Dissolve the cornstarch. While the milk is heated, in a small bowl, dissolves the cornstarch with a little cold milk, approximately 50 ml, until there are no lumps.
  • Cook the mixture. When you have hot milk, remove the cinnamon branch and lemon skin. Add the maicena mixture dissolved to hot milk and remove constantly to prevent lumps from forming. Cook the mixture over medium heat for about 5 minutes, until it thickens and acquires a creamy texture.
  • Let the dough cool. Put the dough in a source or mold, extending it uniformly and let it cool for a few hours in the refrigerator.
  • Shape it. Once the dough has cooled and hardened, cut it into squares or rectangles of the size you prefer to shape it.
  • Fry the pieces. Take a large pan and heat abundant oil. Pass the pieces of fried milk by beaten egg and fry them in the hot oil until they are golden sides. Then, take them out and place them on absorbent paper to remove excess oil.
  • Add the sugar and cinnamon powder. In a bowl mix the cinnamon and powdered sugar and sprinkle on the pieces of fried milk. You will have the portions to serve.
