Cafes “The magical form of salty and sweet” – We found out where to get the best skons in Helsinki

In Helsinki, you can already enjoy afternoon tea sets in several different places, in addition to which the discounts are sold in a few cafés and shops as such.

I baked all my childhood weekends at the breakfast table with the tea cakes I learned at the first grade chef’s club. I later realized that the pastry I made was a sconce. It’s a magical intermediate between salty and sweet – neither biscuit nor real bread.

The origin of the consonance is controversial. According to one view, it got its name from the stone at Scone, Scotland, where the kings were crowned. Others say the name derives from the designation for the fine bread of the Dutch schoonbrot. In Gaelic, sgonn means a shapeless mass, which is often what it looks like as a scones dough. Some consider skonce to be a Peri-Irish delicacy.

Centennial – the first mention of the pastry dates back to 1513 – the cousin of the stron can be found in the United States called biscuit. However, biscuit is usually served with meat dishes. Again, this should not be confused with British biscuit, which means inventing.

It is a crumbly pastry that should be handled and kneaded as little as possible. This, of course, was also in the minds of those who were passionate about baking in the first grade;

The features of the discounts include speed. It is a instant bread that rises with soda and is usually baked with a sour milk product. It allows the soda to react strongly, giving the pastry its characteristic airiness.

Voinen pastry has established itself in British afternoon tea culture in the 1840s at the latest, when Queen Victoria, the chambermaid, Duchess of Bedford Anna Russell, ordered tea between meals and something small on its side.

Traditionally, a sconce is served with jam and thick whipped cream.

In the British a sconce is usually offered with jam and clotted cream. Clotted cream is a very greasy and thick cream that has reached its typical fat content of over 60% when it evaporates in a water bath.

We tested three sketches, St. George’s Coincidental, Limbu Salty and Bruket Unflavoured Skonce. They are pastries raised with a mixture of baking powder and baking soda.

Where? Stockmann’s Food Market Delicacy in the center of Helsinki.

How much? 2.30 e.

There are not many salty scones on offer, but luckily there is Leibomo Limbbu from Lahti. The rind of its manchego cheese skonets is rough and thick. The pastry baked in diatomaceous earth has risen descriptively. The interior is the airiest tested, and can taste good. The buttermilk brings the acidity of the navel in steady vortices alongside the manchego that has spread to the scones. The combination is intoxicating. The Lahtelainen bakery is responsible for consons Kristiina Bern.

Where? Yrjönkatu 13.

How much? 4.50 e.

The basic recipe for St. George Bakery’s scones has been the same from the start, only the spices have varied. The crispy crust of the cranberry concoction baked in diatomaceous earth is greased before frying and is finished with icing sugar. The soda tastes like a teasingly light kick back in the scones. The dough is the most closely tested. Dried cranberries are moist inside the pastry, those lost outside are heavily caramelized. Responsible for discounts Filip Forsberg.

Where? Kaikukatu 4 B.

How much? 3.80 e.

A well-elevated and spherical sconce is the smallest in the test. Its rare neutral taste leaves room for fillings. This time, the skull was made instead of buttermilk in a mixture of milk and cream, which may explain the milder taste of the other skincons tested. The pastry is reminiscent of childhood tea bread, which serves as a base for jam and cheese. The confectioner is responsible for the concessions Juulia Mustonen, and are most likely available on Tuesdays.
