How about starting your week without meat? The Brazilian Vegetarian Society (SVB) has adopted the second international initiative without meat. By choice or by the high price of meat, more and more people are looking for alternatives.
According to data from the OECD, Brazil is the fifth largest meat consumer in the world, with an average of 78kg per year. But, in 2020, 47% of Brazilians reduced their consumption of meat, according to Ibope, in a survey commissioned by the Good Food Institute Brasil

In a survey conducted in 2018, Ibope also found that 14% of Brazilians are vegetarians, which represents more than 30 million people. In 2012 this percentage was 8%.

Vegetarian chickpea burger

Ingredients
- 8 tablespoons of oil
- 1 chopped onion
- 2 chopped garlic cloves
- 1 spoon of turmeric from the ground
- 1 pinch of spicy paprika
- 3 cups (tea) of stewed chickpeas
- Salt and chopped chives to taste
- 1 cup (tea) of rice flour (approximately)
- 4 slices of mozzarella cheese
- oil to grease
Mushroom
- 2 tablespoons of oil
- 1/2 chopped onion
- 300g of chopped mushrooms
- 200g of chopped grape tomato
- 6 tablespoons of soy sauce
- Salt and chopped chives to taste
Yogurt broth
- 1 pot of natural yogurt (170g)
- 2 tablespoons of oil
- 1/2 lemon juice
- 2 tablespoons of chopped mint
- 2 tablespoons of chopped mint
In a saucepan, over medium heat, heat half of the oil and fry the onion, garlic and saffron for 3 minutes. Add the chickpeas and season with salt and chives. Allow to cool and beat in processor until well crushed.
Transfer to a bowl and add the remaining oil to the rice flour, little by little, until shaping point. If necessary, add more flour. Shape the hamburgers. Heat a non-stick skillet, greased with oil, over medium heat, and brown the hamburgers for 3 minutes on each side or until golden.
For the mushroom, heat a pan with the oil and fry the onion until wilted. Add mushroom and sauté for 2 minutes. Add the grape tomato and saute for another 2 minutes. Add the soy sauce, salt and chives, mix well and turn off the heat. Mix the sauce ingredients and set aside. Cut the buns in half, add the hamburger, mozzarella, mushroom stew and sauce. Serve immediately.
