The macaroni with curry sauce They are part of that wonderful range of recipes that are simple, economical and very tasty. Some sumptuous macaroni, with a creamy sauce with a clear Indian (or perhaps British) accent, with various fried vegetables and coconut milk providing sweetness and texture.
The recipe does not, in principle, contain cheese, but nothing prevents you from adding it (it will help make the sauce creamier). Use the macaroni broth (rich in starch) along with the coconut milk to give it the texture you want. If coconut milk is too sweet or exotic for you, use heavy cream.
The dish is vegetarian (with the spices it does not need extra fat contributions), and can be as spicy as you want. If you don’t mind it coming out drier, you can also gratin it in the oven.
Macaroni recipe with curry sauce
Ingredients 4 people:
- 400 gr. macaroni
- 1 large onion, finely chopped
- 100 gr. pumpkin
- 2 cloves garlic, minced
- 1 red pepper, cut into strips
- 200 g mushrooms or shiitake, sliced
- 200 ml of coconut milk (or as much as needed for the sauce to your liking)
- 2 tablespoons curry powder
- 1 teaspoon turmeric (to intensify color)
- 1 pinch of cumin powder
- 3 cloves
- Olive oil
- Salt and pepper to taste
- Chopped fresh parsley or cilantro
Prepare the pasta and vegetables:
- Boil water with salt and cloves in a large pot. Cook macaroni according to package instructions. Once cooked, drain and reserve.
- Heat a couple tablespoons of olive oil in a large skillet over medium heat.
- Add the onion and garlic, and sauté over low heat until the onion is transparent.
- Add the red pepper, diced squash, and mushrooms, and cook until tender (about 5-7 minutes).
Make the curry sauce:
- Add the curry, turmeric and cumin. Stir well so that the spices mix with the vegetables. If you like spicy, this is the time to add it.
- Pour the coconut milk into the pan, mixing well with the spices and vegetables. Simmer for about 5 minutes, allowing the sauce to thicken slightly.
- Taste and adjust salt and pepper.
Mix with the macaroni:
- Add the cooked macaroni to the pan and mix well so that it is coated with the sauce. If you see that the sauce is very dry, you can add a little more pasta broth or coconut milk.
- Serve the macaroni hot, garnished with fresh chopped parsley or cilantro if desired.
