Peach pudding is one of the most popular options and will make you look better if you are having a dinner with family or friends. The first thing you have to keep in mind when starting is choosing the type of mold you want to use. Since it is going to be cooked in a bain-marie, it is advisable to choose a glass one that can be put in the oven.
Ingredients
- 450 grams of peaches in syrup (1 can).
- 400 ml of condensed milk (about 2 cups).
- 160 grams of biscuits or muffins (approximately half a package).
- 4 eggs.
Step by step
- Drain the syrup from the peaches and reserve a small amount of fruit to decorate. If you also save part of the syrup, you can add it to the resulting mixture to give more flavor. Place the rest of the peaches in a bowl and mash them with a blender or mash them with a fork until they form a smooth puree.
- In another large bowl, beat the eggs and add the condensed milk, mixing until well combined. Then, add the peach puree and mix again so that all the ingredients are incorporated (now you can add a little syrup if you want).
- Cut the biscuits into medium pieces and add them to the peach and condensed milk mixture. Stir well so that they are coated with the mixture and crumble slightly, but maintain some of their texture to give body to the pudding.
- Pour the mixture into an oven-safe mold. Place this mold inside a larger baking tray, to which you will add water to make a bain-marie. Cover the mold with plastic wrap and place it in the center of the tray. Then, place the tray in the oven, preheated to 170ºC with heat up and down, and let it bake for an hour and a half or until the pudding is completely set.
- Once the time has passed, take it out and let it cool at room temperature on a rack until it is cold. After that you just have to unmold and present, you can decorate the pudding with reserved peach pieces or with a little syrup to give it shine.
Tips for unmolding
Once cool, run a knife or spatula along the sides to separate the edges. Then shake the mold a little so that it completely comes off. When it comes to plating it, it would be enough to place the plate with which it is going to be presented on top and turn the pudding over.
