LEC ICE CREAM – TECHNICAL NOTES
For LEC, taste must always come first, because ice cream is pleasure. The challenge is to find the best balance between taste and calorie content: LEC ice creams, in fact, have a maximum of 399 Kcal per jar (460 ml).
For an ice cream to be considered “reduced calorie”, the calories must be at least 30% lower than the market reference parameters. According to UIF (Italian Food Union), in July 2023 the average energy (calorie content) of the best-selling tub ice creams on the Italian market is 221 Kcal/100 g. The maximum caloric content of LEC, however, is 150 Kcal/100 g, therefore lower than the average by at least 32%, with peaks of -41% in some flavours. Typically, calorie reduction is achieved through a reduction in fats and/or sugars. In the specific case of LEC, the reduction in calories is mainly due to the reduction of fat, never exceeding 5.2%.
Furthermore, the sugars in LEC ice cream are normally at least 30% lower, up to 50% in some cases, compared to the UIF average of the best-selling tub ice creams on the Italian market, thanks to the use of increasingly widespread and well-known sweeteners, such as erythritol and stevia, instead of older “artificial” sweeteners such as aspartame or sucralose.
The structure of LEC ice cream is also obtained thanks to a high fiber content, a very important nutrient but often not present enough in our diets. Even with names not always known to the public, such as polydextrose and inulin, these ingredients are widely used and are obtained from corn and chicory respectively. Finally, for most flavors available, LEC ice cream is a good source of protein.

With a degree in Economics and Commerce and an important background in financial consultancy, in 2003 he founded the company “Grom – Il gelato come una volta” with his lifelong friend, Guido Martinetti, for which he took care of the administrative aspects, financial and commercial. Thanks to his great overall vision and his strong interpersonal skills, Federico managed to bring the Grom brand to over 15 countries, establishing himself as one of the most influential figures in the world of ice cream.
Who is Guido Martinetti, winemaker and entrepreneur
Guido Martinetti is a talented winemaker and entrepreneur from Turin. Dreamer and visionary, his passions are agriculture and creating emotions. After graduating in Agriculture, a Master’s in Oenology and important experiences in wine cellars, in 2003 he opened the first Grom ice cream shop in Turin together with his great friend Federico, a globally successful brand, for which he studied the recipes, researched the best raw materials and he cultivated various varieties of fruit on the Costigliole d’Asti farm, “Mura Mura”. The great passion and dedication to the quality of the product, starting from the agricultural management of the raw materials, led Guido Martinetti to be considered one of the palates most authoritative in the world of ice cream.
