Chefs of national prestige will highlight, showing some of their recipes live, the importance of an ethical, sustainable, local product with very high gastronomic valuewhich is also widely linked to the traditional recipes of rural Andalusia.
Juan Viu (Restaurante Mare, Cádiz), Mario and Serio Tofe (Restaurante Éter, Madrid), Sergio Lavendán (Restaurante Lavendán, Huesca), Elio Fernández (Restaurante Ferpel, Asturias) and David Montes (Restaurante La Campana, Llanera, Asturias) will review these traditional recipes and the cuisine linked to game meat to provide an avant-garde vision addressing issues as diverse as local cuisine in La Breña or the relationship between game and wine, including the use of hunting offal or deeper link with tradition.
The second edition of these days returns to La Breña thanks to the collaboration of entities such as the Barbate City Council and the Artemisan Foundation, to which this year Asiccaza and Hotel Hacienda Montenmedio join in a bid to take a leap in quality in the dissemination of hunting sustainable and its values.
