A delicious idea for those who enjoy preparing healthy snacks, breakfasts and desserts that have a spectacular texture and are very easy to prepare. It also has an extra bit of sustainability, as it can also become a recipe for use in the event that the mango, the main ingredient, is about to go bad.
If there is a fruit that triumphs in any dessert thanks to its exotic flavor and for his versatility that’s the handle. But also from a nutritional point of view it stands out for its water content, as well as its contribution of fiber, vitamins of group A, B and C and minerals. Another of its attractions lies in its phenolic compounds, which make it a good antioxidant.
When choosing the mango, Chef Bosquet remembers that we can check if it is ripe by checking the smell which it gives off, so if the aroma is sweet without opening it and its touch is firm but gives slightly when squeezed, we have a good piece to work with. As for the conservationit should be remembered that it should be kept at room temperature in a dry place and away from direct light or heat. One more note: if it is preserved with fruits such as apples, its ripening can be accelerated.
-
Mango
200 grams -
Eggs
2 -
almond flour
100g -
chemical yeast
12g
Another of the main ingredients in this healthy snack is the egg, which is a nutritious and satiating combination that can be taken at any time of the day. The egg provides high-quality proteins, a nutritionally advisable proportion of unsaturated and saturated fat, vitamins (A, B2, Biotin, B12, D, E and K) and minerals (phosphorus, selenium, iron, iodine and zinc).
The first thing we will do is peel the mango and cut it into pieces. Next we will mix the mango with the eggs, almond flour and yeast in a bowl.
Once we have all the ingredients in the container, we will begin to blend them with the blender until we obtain a mixture that is as homogeneous as possible, paying attention so that no lumps form. Pour the mixture with all the ingredients into the mold, distributing the contents well.
Place the mold in the oven once it is preheated and bake the cake for about 20 minutes at 180ºC (the time will depend on each oven, it is a general rule).
