He sweet potato roasting is a fall staple. Having a good tray of roasted vegetables prepared in advance gets us out of trouble and solves any meal by providing a delicious touch. Today we use it in one of those dishes that we can make with few and simple ingredients but with an unbeatable flavor and full of nutrients.
I accompany this dish with yogurt and lemon saucea very versatile and simple sauce that is very, very good. But this dish is versatile enough to fit many cuisines and food styles. Today I gave it a very special touch by adding a pinch of paprika, sesame seeds and parsley.
Here are more ideas to customize it to your liking or to fit with your menu:
– Add chopped dill or mint to the sauce to give it a Greek touch.
– Give it a Christmas touch by mixing the sweet potato with cinnamon, a little ground cloves and nutmeg before roasting it.
– For a Christmas tour you can also add freshly roasted pomegranate seeds or pine nuts.
– And if we want an Indian touch, we can add a little curry to the sweet potato dressing, before roasting it.
The following ingredients are for two servings. This recipe is vegetarian.

600 grams -
Cooked white beans
300 grams -
arugula
Sprouts -
Garlic
a tooth -
Extra virgin olive oil
2 tablespoons -

1/2 teaspoon -
Black pepper

To decorate:
2 tablespoons sesame seeds (pine nuts or other nuts or seeds of your choice)
2 tablespoons fresh chopped parsley leaves
¼ teaspoon paprika or other spice to taste

Greek yogurt (or creamy vegan)
1 cup -
Lemon juice
1-2 tablespoons -
Extra virgin olive oil
1 teaspoon -
Salt
¼ teaspoon -
Black pepper

Sesame seeds (pine nuts or other nuts or seeds of your choice)
2 tablespoons -
Fresh chopped parsley leaves
2 tablespoons -

¼ teaspoon to taste
Gathering these ingredients, it’s time to get into the kitchen! In about 35 minutes we would have it ready.
Preheat the oven to 200°C. Line a tray with baking paper. Peel and cut the sweet potato into cubes. Put the sweet potato in a bowl, add the salt, pepper and olive oil. Mix well so that the dressing is distributed.
Spread the sweet potato pieces on the baking tray. Roast 20 minutes. Turn the pieces over and roast for 7 to 10 minutes more, until golden brown. While we roast the sweet potato, sauté the well-drained beans in a frying pan where we brown the finely chopped garlic in a tablespoon of oil.
For the yogurt and lemon sauce, mix the ingredients and let it rest for at least 10 minutes so that the flavor is enhanced. Remove the sweet potato from the oven and let it cool.
Assemble the dish by placing a base of arugula, add the beans, roasted sweet potato, yogurt sauce, paprika, sesame seeds and chopped parsley. The only thing left to do is enjoy!
