Although salads are a hit in summer, they are no less important in the cold months. The reason we like them is because they are usually low in calories and are prepared “in a jiffy”, so Roberto Bosquet, known as Chef Bosquet, knows that these types of meals save us on daily days, which is when we are a lot busier.
According to Bedca data, chickpeas, the main ingredient in the recipe, are rich in vitamin B1 (thiamine), providing 0.45 mg per 100 grams of the food. The amount of vitamin C it has is also notable, with 4.1 mg. Other important data is that they offer 1000 mg of potassium, 143 mg of calcium, 122 mg of magnesium and 6.8 mg of iron.
The recipe proposed by Chef Bosquet also includes avocado, a food useful in weight control, thanks to its satiating powerto its dietary fiber content and the presence of unsaturated fats. It is an antioxidant, helps reduce cholesterol and prevent the appearance of cardiovascular problems. In addition, its topical use allows treating dermatitis, is satiating and improves constipation.

This salad full of flavor and nutrients is made in no time. Chickpeas are what can take the longest since they have to be cooked for 20 minutes at 190º. Enjoy!
We transfer the cooked chickpeas (20 minutes at 190º) to a bowl and add a little salt, oregano, pepper and a good splash of extra virgin olive oil.
We mix well and bake for about 20 minutes.
We remove the stone from an avocado and cut it into cubes. We will also cut a tomato and a green pepper into cubes.
We add a splash of lemon, olive oil, pepper and salt. We mix well.
Then we put a scattered burrata at the base of the plate and put the chickpeas with the rest of the ingredients and season. And that’s it!
