How can we not fall in love with these preparations that include seasonal ingredients – therefore, tastier and cheaper –, simple processes and promising results? Dishes with vegetables, with eggs, with meat, with legumes, with seafood, with fish… We won’t keep you entertained any longer: go, make your shopping list and get to it.
Monday May 6
FIRST: BEET ‘BARBIE’ SOUP
It is inspired by the šaltibarščiai, a typical Lithuanian soup, but it has a more liquid texture than the traditional one and can be made with very accessible products in Spain. You can use already cooked beets to make the preparation even easier.
SECOND: SWEET AND SOUR PORK
The sweet and sour sauce is perfect for the sirloin. The do-it-yourself version of this oriental dish is cheap and tastes better than The Happy Buddha or The Great Wall of China.
DESSERT: WHOLE APRICOT ‘GALETTE’
A light and spring-like sweet, perfect for enjoying the natural sweetness of seasonal fruits and filling your after-dinner meals with color. Yes, when summer appears we become poets like that.
Tuesday May 7
FIRST: ARTICHOKE AND DATES PATÉ
Preserved foods are once again the queens of quality fast cooking. This time in a vegetarian version and in the form of a pâté, with artichokes as the protagonists and some dates as secondary ones.
SECOND: PASTA WITH VEGETABLES IN A SINGLE POT
A very simple technique to add more vegetables to pasta dishes, use leftovers in small or large quantities and can also be applied to frozen vegetables. All without dirtying more than a casserole.
DESSERT: SEASONAL FRUIT: CHERRIES
Cherries are in season and at El Comidista we celebrate it by getting warm with them. But if you click on the link you will see several recipes in case you get bored of eating them alone.
Wednesday, May 8
FIRST: BAGS OF CHED WITH Puff PASTRY AND BLUE CHEESE
Not having time to cook does not mean using pre-cooked meals every day: there are complex recipes that can be adapted. For example, these filled puff pastry bags, in which we skip the step of making the dough.
SECOND: BEANS WITH EGG AND DILL
The best sauce in the world is semi-liquid egg yolk, and these young beans flavored with dill don’t need much more to be a delight of classic Persian cuisine.
DESSERT: SPICED STRAWBERRY AND MANGO SALAD
This salad looks a little over its shoulder at Macedonian salads: it has cinnamon, vanilla, ginger and… the rest is up to you to discover.
Thursday May 9
FIRST: AVOCADO, ARUGULA, RADISHES AND ANCHOVIES SALAD
Spring vegetables and fruits provide an excellent base on which to prepare fresh, colorful salads. Here we combine the creaminess of the avocado with the freshness of the arugula and radishes and the saltiness of the anchovies.
SECOND: BAKED MAKERLEY WITH POTATOES AND PEAS
Two seasonal ingredients and a potato base, which we previously cook in the microwave and finish in the oven just long enough for the fish to be cooked and very juicy.
DESSERT: SEASONAL FRUIT: APRICOT
It is related to the peach and plum, it has very few calories, and a good amount of fiber that makes it a fairly satiating fruit.
Friday 10th May
FIRST: SALTY SPINACH CREPES< /p>
Crepes don’t have to be sweet. Once this is assumed, we can integrate various ingredients into the dough to give them a different touch, as we do in this recipe with the spinach.
SECOND: SAUTEED BEANS WITH CONCENTRATED TOMATO, BUTTER AND SHELL SHELLFISH
Don’t let your laziness get the better of you with the rise in temperatures: eating beans is not just a thing for when it’s cold. Here are some that are made very quickly from already cooked beans.
DESSERT: CHERRY COBBLER
It is worth turning on the oven despite the heat to enjoy this seasonal dessert based on cherries and shortbread cookies, which we will finish with vanilla ice cream (or whatever we like the most).
Saturday May 11
MAIN DISH: VILLAROY BREAST
Chicken wrapped in béchamel, breaded and fried fell into oblivion after being the most popular thing in the 20th century. A bakery in Madrid successfully recovers this old recipe, which is also made with eggs.
DESSERT: SEASONAL FRUIT: STRAWBERRIES
If you only think of eating them alone or with yogurt, you are missing out on many of their possibilities.
Sunday May 12
MAIN DISH: ‘JAPCHAE’, KOREAN STUFFED NOODLES WITH VEGETABLES
Stir-fried noodles are one of the most popular Korean dishes. It is also a good recipe to use: you can add any vegetables you have hanging around the fridge.
DESSERT: MOIST CHOCOLATE CAKE
A chocolate cake with a powerful, moist and juicy flavor topped by a chocolate ganache topping, which we can enhance with a little salt so that the contrast helps us appreciate the sweet more.
The weekend drink
HORCHATA COCKTAIL
Horchata combines quite well with some spices and liqueurs, especially cinnamon and rum.
