Genoa – «I am born and raised in Molassana and I have lived in Amsterdam since 2009. I have been a chef in many Dutch restaurants, then I realized that a real Genoese focacceria was missing here and I embarked on this adventure ». Valeria Lucente is 37 years old and for some months she has realized her dream: to open a Genoese focacceria in Amsterdam, the first ever in the capital of the Netherlands. «I had been studying this project for six years, my dream was to make our focaccia known to the Dutch and now I can say it: they too fell in love».
Valeria’s restaurant is located on the Overtoom, in a street next to the famous Vondelpark. The name leaves no room for misunderstanding, “Focacceria”, an activity born with the aim of not wasting anything and respecting the environment: “We don’t throw away food, we don’t waste materials – says Valeria Lucente – We don’t use single-use plastic but only containers made of corn and sugar, we really care about the environment and the future of our planet ».
Also all the products of “Focacceria” follow a “no waste” philosophy. «We produce six types of focaccia, natural, lard, onions, olives, tomatoes and rosemary and sage. With the daily leftovers we cook other products and with the leftover focaccia we make biscuits to produce our “Focacciamisù”, croutons, snacks and also our “Lasagna 2.0”, a vegetarian focaccia cake ». A tribute to the Genoese cuisine that has conquered the Dutch, but also the Italians who work in Amsterdam. “The reaction of the inhabitants of Amsterdam was really unexpected, from the first day there was a queue in front of our focacceria, the first in the city – continues Valeria Lucente – Many Genoese who work here came to thank me at the entrance, in In particular, two girls made me move by saying that our focaccia is even better than those they make in many ovens in Genoa ».
Word of mouth did the rest and the “Focacceria” has already become a must thanks to the collaboration of Valeria with Marco, a New York partner who was able to start a new life with this project. “Marco was ill with lung cancer and when he recovered I proposed that he become my partner – says the owner – Our collaboration was born from our collaboration. cheese cake with a base of focaccia and salted caramel made in the “New York” style, a delight that the Dutch adore ». Valeria Lucente’s adventure on Dutch soil proceeds at full speed, always with Genoa in her heart. “I am very attached to my city, but unfortunately I have not returned home for work and health since 2018. For this reason I decided to bring a piece here in Amsterdam and for some time we have also started making pesto!”.
