Tuttofood 2021, Mozzarella Dop-Pasta di Gragnano Igp join forces. And together they celebrate World Pasta Day on October 25th
At the Milanese event Tuttofood, in its 2021 edition, the alliance between the Consortium for the Protection of Mozzarella di Bufala Campana PDO and the Consortium for the Protection of Pasta di Gragnano Igp. The two excellences of the South will stage in the same stand (Pavilion P6, stand E35-F38) a program in the name of contamination between the cuisines of the world, which will also offer the opportunity to celebrate an equally international anniversary: the World Pasta Day of 25 October.
In the spaces of Fiera Milano, the two Consortia will be on board the MozzaMobile, an itinerant caravan destined to involve the public. Every day, from 12 noon special live cooking will be staged, real cultural experiments. There Buffalo Dop and the Pasta from Gragnano Igp they are products of extraordinary versatility, capable of integrating into any type of kitchen. Starting from this characteristic, during the days of Tuttofood, we will explore how the two excellences can innovate the traditional recipes of the countries of the various continents. The answer will be given by the chefs of the Food Anthropology Laboratory (Lac), opened a month ago in the heart of Giambellino in Milan by the anthropologist Giulia Ubaldi, with whom the two Protection Consortia have started a partnership on the occasion of Tuttofood. Not a cooking school, but a laboratory where people and cuisines from the world meet. A space dedicated to food as knowledge, where recipes are the starting point for discovering the stories of people and cultures.
The calendar of events will offer for 4 days the combination of PDO mozzarella, Gragnano IGP pasta and dishes from all over the world. We will start on 22 October with an African specialty, typical of Mauritius: Gragnanese pasta will be inserted in the traditional sauce of Dhal Puri with prawns, curry and aubergines. On 23 October we fly to Argentina with empanadas revisited with mozzarella from Campania, pancetta and broccoli. Again on October 24th we pass in Armenia, in the Asian continent, with a dish that enhances a local cooking technique, the pilaf, usually combined with rice, but which this time will be offered with Gragnano pasta and buffalo mozzarella. Finally the October 25 we are back in Europe, in Albania, where the traditional “Pastiçe” will be made with pasta from Gragnano and Bufala Dop.
The international homage to World Pasta Day is also colored by recipes of the tastiest Mediterranean tradition, such as the “Ziti mezzani alla Genovese and cream of buffalo ricotta from Campania DOP“And”Macaroni with veal meatballs, Campana DOP buffalo mozzarella and tomato sauce”Prepared live by the chef Giuseppe Daddio in the MozzaMobile.
