Under a blanket of snow, the vineyards of the Côte d’Or region of France seem asleep in winter. However, it is during this season that their fate is played out: the vines are pruned and bonfires are lit to protect them from frost. Meanwhile, the coopers make the barrels for the next harvest, with a know-how that has earned them international success. In the cellars, day after day, the oenologists and their acute senses supervise the aging of the wines in the barrels.
