Under a blanket of snow, the vineyards of the Côte d’Or region of France seem asleep in winter. However, it is during this season that their fate is played out: the vines are pruned and bonfires are lit to protect them from frost. In the cellars, day after day, the oenologists and their acute senses supervise the aging of the wines in the barrels.
