The Roca brothers, each month, in addition to selecting the best seasonal products and preparing a proposal to cook them, they choose a star ingredient. “This month we propose peas, an absolutely wonderful legume”, comments Joan Roca. The Catalan chef explained that it is a “gastronomically very interesting product, but also on a nutritional level, with very little caloric intake and very rich in fiber, vitamins and proteins.”
The peas proposed on this occasion are from Sant Andrés de Llavaneras (Barcelona), from the Huerta de Francesc Pera, dedicated for four generations to raditional agriculture. Specifically, some peas of the native variety floreta or garrofal. To consume them, the elder Roca presents a recipe for tear peas with vanilla oil, very simple to cook and original at the same time, since it plays with the sweet and salty flavors of the product.
For him main dish the Roca’s propose a classic recipe very appropriate for the winter season. It is about pork cheeks with red wine. The meat in this case comes from Aínsa (Huesca) from the Carnísima company. These organic meat producers were awarded by BBVA as one of the best sustainable producers in Spain, thanks to the environmental and social philosophy that governs the company: grazing to maintain the balance of the environment, collaboration with small producers in the area or job creation local.
The recipe also contains a bresa made with vegetables (spring onions, carrots and leeks) provided by Can Bené, an organic garden in the Maresme region (Barcelona). The recipe is completed with a celeriac from Josep Mestres Suqué, who grows organic vegetables on his own family farm located in Terres de l’Ebre (Tarragona).
The basket, which always contains a wine to pair with the gastronomic proposal, offers this month a bottle of ‘La del Terreno 2019 DO Bullas’, by the young winemaker Julia Casado. This entrepreneur settled in Bullas, in the Sierra de Lavia Regional Park (Murcia) to design its tiny and modular winery, integrated into nature and energetically sustainable. “Casado knows how to transmit his emotions and intellectual experience through the simplicity and purity of his natural wines,” said Josep Roca, sommelier at El Celler de Can Roca.
