In previous episodes we had Samantha Hudson, El Mundo Today, Ladilla Rusa or Luc Loren, and today it is the turn of Rocio Quillahuaman.
This illustrator and cartoonist “makes animations of people she doesn’t like” -seen on his Twitter bio-, has a legion of fans who love his corrosive videos with exploding heads, and has just published her first book, Brown (Blackie Books), in which she recounts her experience as a Peruvian migrant in Barcelona. The recipe that she prepared for us is a classic from her country of origin: chaufa rice. In industrial quantities it is not going to be that someone stays hungry, as you can see in the video above.
ROCÍO QUILLAHUAMAN CHAUFA RICE
Ingredients
- 4 cups of rice (about 750 grams)
- 1 chicken breast
- 6 sausages
- 5 eggs
- 2 garlic cloves
- 1 piece of fresh ginger
- Siyau (Peruvian soy sauce)
- Chive
- Cumin
- Sugar
- Olive oil
- salt and white pepper
Preparation
- Peel the ginger and cut it into small dice.
- Cut the chicken into small pieces. Put it in a bowl and season it with salt, white pepper, cumin, half the ginger and a good splash of siyau. Leave in the fridge resting for a minimum of half an hour.
- Heat a good splash of olive oil in a large saucepan. Lightly sauté the minced garlic and the rest of the ginger with a teaspoon of salt.
- Add the rice and 6 cups of water (approximately 1.5 liters), stir and cook over low heat, almost completely covered. When it is almost ready, wet it with a good stream of siyau, turn off the heat and leave covered.
- While the rice is cooking, beat the eggs in a bowl and season with a pinch of cumin, salt and sugar.
- Heat a frying pan with a little oil and make thin egg tortillas, first on one side and then on the other. Remove to a plate and slice or chop as desired.
- Cut the sausages into slices and brown them in the same pan. Reserve.
- Do the same with the chicken.
- Add the fried meats to the rice. Paint the rice with soy sauce well, mix and add the egg.
- Finish with the chives, stir and serve.
