Playing with temperature is extremely important when preparing food, says Beuk. A few degrees difference can have a major impact on the end result, especially when cooking meat and fish, explains Ramon in his book wayooh!. He strives to make cooking accessible to even the most inexperienced cooks.
“I am quite in favor of using the oven,” says Beuk. “We have much more control over our product in the oven than when we cook it in a pan. Of course, a good cook has learned how to cook meat and fish perfectly in a pan. But we went to school for that and learned the details that make the difference.”
When Beuk has to explain to people how to get perfect results when preparing fish or meat, he really recommends using the oven at a constant temperature. And surprisingly enough, you can do that with plastic bags. “Ziplock bags can also be used in the oven and not just in the fridge and freezer. But at a low temperature, because at a low temperature you can cook products perfectly without the bag melting and harmful substances being released.”
Where can you get such bags? ,,I emphasize again that I do not use oven-proof bags and that these bags are not heat-resistant at all. But I still use these freezer bags with closure in the oven. But at a temperature below 70 degrees. The temperature at which the plastic does not melt.”
Beuk continues: ,,We tend to fry fish and meat way too hard and let them cook until all proteins solidify and juices come out of our product. You can prevent this by leaving the oven at a low temperature and taking more time for cooking fish and meat.
In addition, the ziplock bag is and remains perfect for storing ingredients and meals in the fridge and freezer. My freezer is full of those bags. Herbs, leftover sauces, think of it and you can use them. The advantage is the convenient opening and closing of the bags. I personally find few things more inconvenient than buttoned bags in the freezer that you then have to pick open with a lot of effort. It is clear that I am a big fan of ziplock bags.
