For the Mexican there are no limits, because since the appearance of the manteconcha, other mixtures of sweet breads have emerged in the country. Such is the case of the “pigs”, that was born from the mix between the bread known as cochito or puerquito with the shell.
This food was created by the students of the bakery workshop of the DIF Municipal Durango who in their eagerness to continue innovating decided to make this ideal delicacy to eat on rainy days.
According to its creators, this bread is very different from the traditional cochito, because as it is a fusion with shells, its texture is softer.
How to make pork belly
Ingredients
- 100 ml of water
- 200 gr of piloncillo
- 1 slice of dinner
- 1 clove
- 250 grams of flour
- 1/2 tablespoon of baking powder
- 1 tablespoon of salt
- 1 tablespoon baking soda
- 150 grams of butter
- 1 egg
- 1 spoon of vanilla
- 1 egg to glaze
To prepare this kitchen recipe, the first thing you should do is prepare the syrup with water, piloncillo, cinnamon and cloves in a saucepan where you should boil the mixture and then let it cool.
Then you must prepare the dough in a bowl or a tray, mix the flour with the baking powder, salt, baking soda and add a little of the syrup with the egg and vanilla.
After obtaining a homogeneous mixture, cover with plastic and let it rest for an hour. After that, you must spread the dough with a rolling pin and cut the pigs with a figure.
Ingredients to cover the pork rinds
- Flour 100 Grams
- Vegetable shortening 100 grams
- Vanilla extract 8 cm3
- icing sugar 100 grams
- Cocoa 15 Grams
For the mixture of the shells, you must mix butter, flour and sugar very well, divide into two portions, add vanilla to one and add cocoa to another to have two flavors.
Divide the mixture into portions of about 70 grams forming balls which you must grease with vegetable shortening.

After that, you should cover the cut piglets with the mixture with a slight crushing and mark the frets of the shells with the marker. Let it rest for about 20 to 30 minutes and then bake for 15 to 20 minutes in a preheated oven at 180° C.
