Let’s start with the pancakes themselves. Pancake dough is a rather heavy food, and besides, it is very high in calories. It is this, according to the culinary historian Alexander Prokofiev, that gives them a unique taste. “The fatter the dough, the deeper the taste of the pancakes, so forget about the diet if you are going to please yourself with them. It’s pointless to save calories on pancakes”he claims.
However, if you have problems with the gastrointestinal tract, then pancakes can provoke an exacerbation. Besides, since pancakes are cooked with a lot of oil, they also increase the load on the pancreas. If you watch your weight and count calories, you should not get carried away with pancakes either, otherwise you will have to lose the kilograms gained in a week for a long time.
However, there is good news for pancake lovers. In order not to harm the body, it is enough to give up only the most difficult to prepare and heavy types of pancakes. These are, first of all, traditional “red” pancakes with the addition of a large amount of muffin – yolks and butter, as well as “royal” pancakes with cream. Such food is definitely heavy for the stomach, and it is better to do without it. Traditional wheat pancakes, which include mainly flour, milk or kefir and sometimes eggs, will be less difficult for the body.
You can also pay attention to diet recipes for pancakes. Yes, there are some, and nutritionists especially recommend them to overweight people. According to nutritionist Margarita Koroleva, such people it is worth replacing wheat flour with buckwheat or bird cherry flour and adding gluten-free ingredients to pancakes. “You can cook such pancakes on water, without adding milk. And I recommend everyone to cook pancakes without the addition of cow’s milk.says the Queen.
Maira Rau, a specialist in the treatment of overweight and obesity, states that people with overweight and diabetes can also eat pancakes made with oatmeal or a mixture of whole grain flour and premium flour. For the rest, she advised adding less oil and sugar to the dishes. “I also recommend not to grease each pancake with butter. For aroma and taste, you can add a little melted butter to the pancake mixture.” she explained.
What filling for pancakes is less harmful
Pancakes with sour cream traditionally hold the first place in popularity, followed by pancakes with caviar and red fish. Popular toppings also include a variety of preserves, jams and condensed milk.
But doctors also advise to choose the fillings with care. So, according to gastroenterologist Elena Tyulpina, pancake additives such as jam or condensed milk, significantly increase their calorie content and glycemic index. And adding caviar, milk, fish liver as a filling can provoke poisoning. These products do not undergo heat treatment, Tyulpina noted, because of this they contain a large amount of pathogenic flora. So you should use them with caution, and if you have sensitive digestion, then it is better to abandon them altogether.
The therapist Timur Asanov agreed with this approach. According to him, the most high-calorie pancakes with jam, preserves and condensed milk. If you overeat such food, it can cause a feeling of heaviness in the stomach and indigestion. Well, the most useful, according to him, will be low-calorie protein fillings – poultry, beef, caviar.
Nutritionist Margarita Koroleva, in turn, advises paying attention not only to the number of calories in a particular filling, but also not to its glycemic index. “Fillings with a low glycemic index can also be berries, vegetables, sources of complete protein, so that a person is both satiated and does not harm the body,” says Koroleva.
How many pancakes can you eat
According to doctors, the number of pancakes in the diet for Shrove Tuesday should be limited, while focusing on the state of your body. So, patients with chronic cholecystitis or pancreatitis should eat no more than two or three pancakes a day, and for those people who have been diagnosed with diabetes, it is better to completely abandon fatty, high-calorie foods. The rest, however, should also complete Maslenitsa with caution: overeating is not good for anyone.
In addition, doctors advise paying special attention to the freshness of pancakes and their storage conditions. “Pancakes are a perishable product. Their shelf life is short: a stack of pancakes that has just been baked and left on the table – after a few hours, pathogenic flora begins to actively develop in it, ” – says gastroenterologist Elena Tyulpina. If you leave them on the table and eat them a day after cooking, this can lead to severe intoxication of the body. Children can be especially hard hit by it, so they should be served only a freshly prepared dish.
