Mrs. Hamersma likes to make pies, terrines, pâtés and quiches. All things considered, there are only two addresses where she lets herself be taken care of. One is not too far from her cookbook shop and is called Slagerij De Beurs. Contrary to what the name suggests, it is indeed a restaurant, but the knife – a carving knife – cuts both ways here. The business is run by Timo de Beurs, a cook who comes from a butcher’s family. His view of ‘the meat confectionery’, as Mrs. Hamersma calls it, is inimitable. We invariably have his pâté or terrine of the day served there. Recommended, and will always remain on the menu, we are assured, is his preparation of pork knuckle. Remarkably enough, the butcher also turns out to be an exceptionally skilled pastry chef. The sporadic times that Mrs Hamersma ‘sin’ sweetly is in De Slagerij.
