Latkes aren’t exactly a novelty dish: In their current form, Ashkenazi Jews have been consuming them from the late 19th or early 20th century. However, these shredded potato and onion pancakes seem to be experiencing expansion these days thanks to social media, which is not surprising considering their appeal: you see a picture of a latke on instagram and it’s hard not to feel a certain need to try it.
At their best, latkes are crispy on the outside and squishy on the inside. Its basic list of ingredients is not long (potato, onion, egg and little else), but allow the entry of others without major problems, are spices, herbs or vegetables that replace part or all of the potato (see carrot, courgette, sweet potato or beet). LATKES (POTATO FRENCH PANCAKES)
Ingredients
For about 16 latkes
- About 500 g of sour potatoes or monalisa
- 1 large onion (approximately 250 g)
- 2 eggs
- 60g of crackers either unleavened toast
- Mild olive or sunflower oil
- 2 level teaspoons of salt
Preparation
- Finely chop the onion and grind the crackers until they turn into powder.
- Peel potatoes. Cut them into four pieces if they are large, or in two if they are small. Grate them into thin strips with a mandolin or a food processor, or failing that, with a grater.
- Put the potato on cheesecloth or fine cloth, make a bundle and squeeze to get as much liquid as possible out of the potatoes.
- In a bowl, combine the potato with the onion, the beaten eggs, the crushed crackers and the salt. Mix well.
- Put a generous splash of oil in a frying pan and heat it over medium heat. It should be hot, but not too hot, otherwise the latkes won’t cook well inside.
- Take portions of the dough with your hand and form flat disks about four fingers wide, and fry them in batches first on one side, and then on the other. When they are golden on both sides, leave them on a grid or kitchen paper.
- They can be accompanied with a sugar-free applesauce or with a yogurt sauce with lemon and salt, guacamole. And they are also good with guacamole or with cream cheese and smoked salmon.
