We have said it a thousand times in previous episodes: in few places is fish fried with more art than in Andalusia. However, the latest fried anchovies that have fascinated us have not been found in the south of Spain, but in a half-French, half-Japanese restaurant in Barcelona.
what they do in Yubibasically, is to apply the tempura technique to these little fish, which you can then dip in a very light Japanese sauce called tentsuyu. They are as delicious as they are easy to make, and to learn how to prepare them, all you have to do is watch the video above.
ANCHOVIES IN TEMPURA FROM THE YUBI RESTAURANT
Ingredients
For 4-6 people
- About 36 anchovies (approximately 900 g)
- Flour for tempura (can be buy prepared or mixing two parts of wheat flour for one of cornstarch)
- Sunflower oil
- Salt
- daikon turnip (optional)
Tempura
- 150g tempura flour
- 2 g poppy seeds (a level teaspoon)
- 1 egg yolk
- 200 ml of very cold water
tentsuyu sauce
- 200 ml of water
- 3g of dashi (beautiful broth) powder (one level teaspoon)
- 50 ml low-salt soy
- 50 ml of mirin
Preparation
- Remove the head, the guts and the spine from the anchovies, leaving the two loins clean and together in the shape of a butterfly.
- Put the egg yolk, seeds and water in a bowl. Beat with the help of a whisk and add the flour little by little until it has a medium thick texture.
- For the tentsuyu sauce, put all the ingredients in a saucepan and let it boil for about 3 minutes. If you have daikon turnips, grate a couple of tablespoons, crush them with your fingers so they lose their liquid, form a ball and place it in the center of the bowl in which you are going to serve the sauce.
- Heat abundant oil in a saucepan or frying pan.
- Salt the anchovies, pass them first through the flour and then through the tempura batter, and fry them in the very hot oil until they are slightly golden. Remove them to a plate or tray with kitchen paper to remove excess oil.
- Serve them immediately, with the hot tentsuyu sauce on the side in the bowl in which the radish has been placed.
