Dehesa Maladúa’s is a story of passion, tradition and deep respect for nature. 14 pigs are to blame that, 20 years ago, Eduardo embarked on the adventure of recovering a race of practically extinct Iberian pork and converting them into The most valuable ham with several international awards, including the Guiness Record.
Leaving behind his professional life in Catalonia, Eduardo embarked on the mission of rescuing a forgotten way of life, cultivating Iberian pigs fed with acorn in an ecological way and in harmony with his surroundings. Overcoming important challenges, a farm restored, making it a sanctuary for traditional livestock and respect for biodiversity. Dehesa Maladúa is today the testimony of Eduardo’s vision, which produces some of the most precious Iberian hams in the world, recognized for their exceptional quality and authenticity.
The price is due to the characteristics of the piaras, as well as the lifestyle of the animals that make the process more expensive and limit production. The company has a cabin of pure Iberian specimens that are born, grow and reproduce in the natural park living in freedom all year, in an ecosystem constituted by oak pastures, cork oaks and complaints declared by the UNESCO Biosphere Reserve. The pigs follow a traditional food of this ecosystem and in a montanera regime champion freely nourishing their basic food: some pastures of unique characteristics, acorns and spring water. Three years live in one pasture and up to six years of healing in natural dryers, until reaching the ideal maturation point.
Flamenco Theater is committed to the preservation of the musical heritage of flamenco and excellence and for this symbiosis it has exceptionally united flamenco with a gastronomic show by Emilio J. García-Ortigosa and Julio Ortega, two of the best ham cutters in the world.
