Table setting is an exam subject at the Butler Academy in Simpelveld. The students set to work using a measuring stick and spirit level. The plates 2 centimeters from the edge, the chairs all equally spaced, the wine glasses in a tight slant to the back. Everything should be symmetrical: if you put a mirror in the middle of the long table, one side should be identical to the other. Teacher Paul Huizinga (63): ,,I know from Windsor Castle, the palace of the English royals, that the butlers walk over the table in slippers to put everything in its place. It’s not that big here. Still, it takes the students at least a few hours to cover, measure and decorate the table.”
