Roca, third, Aduriz, fifth and Enjoy seventh on the Best Chef list, which includes 16 Spaniards
“Jo, what a night,” Dabiz Muñoz was right to say when he was recognized as the best chef in the world according to the Best Chef list, which crowned him this Tuesday for the second consecutive year at a gala held at Madrid’s Palacio de Cibeles. After the triumph obtained last year in Amsterdam, this time DiverXo received the award in his land, where dozens of chefs, journalists and gastronomes from all over the world have gathered. The list of the hundred best chefs on the planet also includes another seventeen names of Spanish professionals or those based in Spain. Muñoz rounded off a tremendous night by grabbing two special prizes, the best chef voted by the chefs and the urban chef.
Spanish cuisine gains weight in the 2022 list -18 compared to 13 last year- and gains positions at the top of the table. The same four names from our country remain among the top ten, with a slight dance of positions. Roca was fourth in 2021 and is now third, Aduriz goes from third to fifth place and Eduard Xatruch, Mateu Casañas and Oriol Castro drop from sixth to seventh. The one from Mugaritz also wins the special award for Science and Gastronomy. But the national presence in the top 20 is growing, with Ángel León in 13, Eneko Atxa in 18 and Bittor Arginzoniz, who was not in 2021 and goes directly to 19th place.
Paolo Casagrande, the Italian at the helm of Lasarte from Barcelona under the seal of Martín Berasategui, overtakes his mentor and ranks 26th, Quique Dacosta 33rd, Paco Roncero 36th and Diego Guerrero 38th. find the Torres brothers in 41, Berasategui in 42, Paco Morales in 43 and Dani García in 56. And towards the bottom of the table are the Argentine living in San Sebastián Paulo Airaudo, 85, Paco Pérez in 87 and Fina Puigdevall and her daughter Martina Puigvert in 1996. They were candidates to enter but Ricard Camarena, Javier Olleros, Jordi Vila and Mario Sandoval have not passed the cut.

In the gibberish of lists, guides and distinctions that orbit around gastronomy, Best Chef is practically a newcomer, which has nevertheless managed to capture great international attention in a meteoric way. Founded in 2015 by the Polish neuroscientist Joanna Slusarcyk and the Italian gastronome Cristian Gadau, with the purpose of identifying the world leaders of the profession, it began as an initiative limited to social networks. Two years later, the couple decided to make the leap and emulate other reference lists with a live ceremony, a tool to obtain sponsorships and feed the media coverage of the event.
Unlike other distinctions that value the experience of a specific restaurant, this one focuses on chefs, not just as professionals in the kitchen, but as cultural and media personalities. “It’s not enough just to cook well, their image and personality are rewarded, what they represent, how they do things and the values they convey,” explains Slusarcyk. For the rest, they try to follow the pattern dictated more than 20 years ago by Restaurant magazine that gave rise to the 50 Best Restaurants list – a global approach, itinerant ceremonies, anonymous voters and even a mineral water sponsorship – but with substantial differences.
The main one is the body of voters, in this case made up of the chefs awarded in previous years, the candidate chefs selected by the organization itself and some 150 anonymous professionals -journalists, critics, bloggers, photographers «and other notable people with extensive knowledge of gastronomy”. The chefs have more influence in the final decision -70% compared to 30% of the rest of the voters- “so that they can show their respect towards their colleagues”, which in practice turns the list into a popularity contest among the union. In addition, the voting system has some gaps, such as knowing who makes the inventory of chefs from which each voter can select 10 candidates or if it is necessary to visit some of the restaurants of each chef in order to vote.
After criticism for the lack of women or non-Western professionals on the list, the organization’s challenge is to expand the body of voters and scouts to be able to identify new talent, beyond shuffling the same cards every year. What they have apparently already achieved, by stroking the chefs’ egos, is to seduce the administrations with promises of an international media impact. After passing through Warsaw, Milan, Barcelona and Amsterdam, this time the Madrid authorities have rolled out the red carpet. Muñoz had it very much in mind in his speech, which he began by thanking the Community and the City Council “for having made a strong commitment to gastronomy.” A bet, that of bringing the event to the capital, which some put at half a million euros.
