The heat waves hit the Peninsula without mercy, so there is little better we can do than cool off with vitamin cocktails like this cucumber, strawberry and watermelon salad that will give us supervitamins, remineralize us and hydrate us, all in one. It is also delicious and admits different variations, depending on what we find -already or still- in our main greengrocers-greengrocers.
This little salad is a compendium of very watery and fresh fruits and vegetables, perfect for summer and its prelude: cucumber, strawberries -if you are lucky enough to still find them in your area-, watermelon and red onion. Season with aromatic lime juice, good olive oil and salt and pepper. If you can no longer find strawberries in your trusted stores, you can replace them with nectarines or other stone fruit, or even with melon.

An observation: keep in mind that it should not be prepared too far in advance, because the delicate fruits soften and lose their freshness. In any case, season at the last moment because salt helps fruits and vegetables release liquid and wilt. Ingredients
for 4 people
- 300 g of clean strawberries
- 300 g watermelon without rind
- 1 cucumber
- ½ red onion
- some mint leaves
- The juice of 1 lime
- 2 tbsp. virgin olive oil
- Salt to taste
- freshly ground black pepper
Preparation

Wash the cucumbers, because we will use them with the skin. Cut into cubes of the size you prefer.

Cut the watermelon into cubes equally and finely chop the purple onion.

Remove stem from strawberries and cut in half or quarters.

Put all the fruits and vegetables in a salad bowl; Season with lime juice and olive oil. Remove gently. Salt the salad at the time of serving and sprinkle with ground pepper at the time.
