However, chicken with garlic does not have to be indigestible if you put the whole cloves in, do not eat them, and just enjoy the wonderful flavor they give to the sauce. This is just one of the many advantages of this classic of Spanish cuisine, which is made with the cap, is cheap, includes few ingredients and does not require any culinary knowledge in its preparation.
Our version respects the traditional formula. As Nigella Lawson, here we believe in “maximizing pleasure”, and that is why we incorporate some small details to enhance the flavor: a few grains of pepper, brandy instead of wine and a touch of sherry vinegar. GARLIC CHICKEN
Ingredients
for 4 people
- 800g skinless chicken thighs (approximately 1kg if not boned)
- 1 head of garlic
- 1 bay leaf
- 3 or 4 small dried chillies
- 100 ml cognac or brandy
- 1 teaspoon peppercorns
- 1 tablespoon sherry vinegar
- 150ml olive oil

Preparation
- Peel the garlic cloves and sauté them with the bay leaf and oil in a saucepan over medium-low heat. Make sure they don’t burn.
- Salt the thighs.
- Remove the bay leaf and the garlic when they are golden, raise the heat and when the oil is very hot, fry the drumsticks in it in batches, until they are golden on all sides. Transfer them to a plate and lower the heat.
- When the oil has cooled, return the chicken and garlic to the pan. Add the brandy, the chillies, the peppercorns and the sherry vinegar. Add about 150 ml of water, stir and cover. Let the chicken simmer for about 40 minutes, or until tender.
- If the sauce is very liquid, you can remove the chicken and garlic and reduce it for a few minutes over high heat.
