Gamberro’s irreverent and festive cuisine in Zaragoza

Two recipes with an Aragonese footprint: the Guardia Civil 2.0, a very personal version of the popular Maño sandwich that is accompanied with a jalapeño gazpacho; and the tempura brains, which are inspired by the battered brains so typical of the land. Ultramarines del Coso opens in Chamberí. Avant-garde tavern that recovers familiar dishes such as offal and stews, reinterpreted by Lamucca’s executive chef, Dani Álvarez Marthón.
