Of the December 1 to 22 will be celebrated IV edition of the Black Truffle Conference of the Province of Zaragoza within which different actions will be carried out such as the II Competition of Hospitality Schools of the Province of Zaragoza, the Transfer and Local Markets conferences and the IV Exhibition.
Organized by the Association of Truffle Growers of the Regions of Zaragoza (Truzarfa) in collaboration with the Center for Agri-Food Research and Technology of Aragon (CITA) and the Zaragoza Provincial Council, the conference will start next week with a visit of the CITA Trufculture team to the training centers specialized in hospitality from the province of Zaragoza.
In this edition, the theoretical and practical training will reach the IES Juan de Lanuza (Borja), IES Zaurín (Ateca), IES Mar de Aragón (Caspe), IES Miralbueno (Zaragoza), TOPI (Fundación Picarral, Zaragoza) and the Fundación King Ardid. Precisely, the latter is the first Second Chance School to participate. Additionally, in this edition the IES Pablo Serrano from Andorra (Teruel) will join as a guest school.
In all these centers you will learn to identify and differentiate the species of truffle and their quality, in addition to learning about various culinary techniques and explaining how to recognize the most frequent frauds in truffles and truffle products.
This edition also includes the II Competition of Hospitality Schoolswhich will take place on December 11. Two prizes will be awarded to the participants: the best dish and the best dessert with black truffle in the province of Zaragoza.
In this election there will be a multidisciplinary jury formed by prominent figures from the gastronomic and journalistic world such as Domingo Mancho, president of the Aragon Chefs Association; Pedro Marco, researcher at the Aragon Agri-Food Research and Technology Center (CITA); Carlos Arnadudas, secretary of Truzarfa; Toño Rodríguez, Chef of the Year in Alimentaria 2024; Manel García, Eurotoques delegate in Aragon; Mariano Millán, representative of Heraldo de Aragón; Cristina Palacín, deputy delegate of Tourism of the Zaragoza Provincial Council; Susana Casanova, chef at La Clandestina; and Cristian Palacio, chef of Gente Rara.
The program includes the transfer days. On this occasion, the municipalities of Fuentes de Ebro (December 1), Borja (December 14) and Ejea de los Caballeros (December 15) will be visited. From 9 a.m. to 2 p.m., with free admission, there will be a fresh truffle market and other related local and provincial products, in addition to presentations to share with attendees, in an educational and entertaining way, the tricks of this very important ingredient. in the field, and essential at the table.
These meetings will reveal the best conservation techniques, various culinary uses, and common myths about this mushroom will be dismantled. Furthermore, the expert María Jesús Blanco, owner of La Lasca Negrawill be the star of a cooking show in which each place will have the collaboration of a local chef who will enrich the culinary experience.
The activities of this edition will come to an end with the IV Sample of the Black Truffle of the Province of Zaragoza, which will take place at the Sástago Palace in the Aragonese capital on December 21 and 22. A dozen exhibitors of fresh truffles and related products can be visited from 11 a.m. to 2 p.m. and from 5 p.m. to 8 p.m. on Saturday, and on Sunday from 11 a.m. to 2 p.m.
There will also be parallel presentations with free access until capacity is reached, among other events such as showcooking in Puerta Cinegia with Enekowinner of MasterChef 11, to enjoy the preparation and tasting of a recipe live. For this event, places are limited and can be purchased at a price of 5 euros.
Black truffle production
Spain consolidates itself as a world leader in the production of black truffles, with an annual harvest greater than 130 tonswhich represents up to 60% of global production.
Aragon is the epicenter of this crop in Spain, providing the 95% of national production. Within this community, the province of Zaragoza stands out with 2,100 hectares dedicated to the Tuber melanosporum or black truffle. This year, the harvest is expected to be outstanding thanks to the abundant rains recorded between the end of August and October, combined with milder temperatures during the summer period than in other years.
