The recipe for ‘The Bear’ chocolate cake
The particularity of this dessert is that it is created with an aerated chocolate mousse, glazed with cocoa and three fluffy layers of sponge cake. The preparation of this dessert consists of different parts.
CHOCOLATE MOUSSE INGREDIENTS
- 220 g dark chocolate
- 5 tablespoons unsalted butter
- 1/4 cup granulated sugar
- 4 egg whites at room temperature
- 10 egg yolk at room temperature
- 1/2 cup whipping cream
For make the chocolate mousseThe first thing we should keep in mind is to slowly boil water in a saucepan over medium heat. We will have to place a container on it and add the chopped chocolate along with the butter. We stir from time to time so that it melts. When we have it, we remove it and let it cool.
We beat the egg yolks with two tablespoons of sugar in a bowl that we will place over the pot of water that is still on the heat until the mixture takes a temperature of 70ºC. We remove it and put it in the mixer to beat until the mixture is pale yellow in color and looks thick. We added this to the chocolate that was cooling.
Then we will have to beat the egg whites until it looks like foam. We will have to add sugar in a constant and slow stream. We add this to the previous mixture little by little, we cover it and let chill at least 8 hours.
INGREDIENTS TO MAKE THE CAKE
- Flour Baking Spray
- 500g flour
- 225 g cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 2 teaspoons kosher salt
- 5 eggs
- 500g sugar
- 225 g of ground coffee
- 180 g melted unsalted butter
- 250 g crème fraîche
For make the cakethat is, the layers of the cake, the first thing we must do is preheat the oven to 175ºC. In three round molds we will spray the baking spray. Sift the flour, baking soda, cocoa and yeast into a bowl. We also add a little salt. On the other hand, in the mixer we beat the eggs until they are foamy and add sugar little by little.
Add the flour mixture alternating with the coffee and melted butter. We beat until everything is well, mix and include the crème fraîche. When everything is well beaten, we distribute the dough into the molds and we bake for 25 or 30 minutes. Once ready, we let it cool.
INGREDIENTS FOR THE GLAZE
- 500g sugar
- 100 g thick cream
- 250 g cocoa powder
- 225 g unsalted butter, softened
- 2 teaspoons vanilla extract
For him glazed You will have to sift the sugar and cocoa in a bowl. Then, we beat the butter until it is creamy, add sugar and mix. Little by little we add the cream and vanilla extract. After mixing everything, we put it in a pastry bag.
With all the preparations ready, it is time to assemble the cake. We place a layer of cake on the plate and put a little frosting on the edge. Pour the mousse in the center and spread evenly. We put another layer and repeat the same process. With the third layer on, we spread the remaining frosting, also on the sides, and let it cool.
