Scientists from the Higher Medical and Biological School at South Ural University (SUSU) in Chelyabinsk have created starch that is beneficial for diabetics. This is reported by “Russian newspaper”.
Russian specialists treated it with ultrasound in order to increase the amylose contained in the product. It is known that this substance works as a prebiotic and has an anti-inflammatory effect on the gastrointestinal tract. During the experiment, the institution’s staff increased the level of amylose fourfold, thereby increasing the usefulness of starch for diabetic nutrition.
“Our ultrasonic modification not only safely changes the structure of starch, but also makes it useful. We have already developed technological instructions for an industrial partner who is ready to implement our method in food production,” said Alena Ruskina, senior lecturer at the Department of Food and Biotechnologies.
It is clarified that the scientists’ development has already been patented and recognized as promising and environmentally safe.
Earlier it was reported that employees of Novosibirsk University have invented a new way to create vaccines against viral diseases. Project manager Sergei Sedykh said that the technology makes it possible to create effective means of vaccinating people within four months from the moment a new threat appears.
