Chemist Yurova urged Russians to refuse dishes with burnt crusts
For the sake of health, it is necessary to stop eating dishes with burnt crusts, urged Natalya Yurova, a senior lecturer at the Department of Theoretical and Applied Chemistry of the State University of Education. In a comment for NEWS.ru, a specialist warned about the dangers of such specially prepared food.
According to Yurova, all dishes with a fried or burnt crust contain carcinogens. And, contrary to popular belief, the crust is not ordinary carbon, but real poison.
Carcinogens formed in overcooked food, be it meat or vegetables, are harmful to health, the chemist continued. Because of them, metabolic failures occur and autoimmune processes can begin. In addition, it has long been proven that carcinogens increase the risk of tumor development.

Yurova also said that carcinogens are formed in oils during strong heating and boiling. Under the influence of oxygen in the oil, the breakdown of vitamins begins, and then oxidation and polymerization occur.
